Hilton Adelaide will officially close its doors on 1 July, ending a long chapter for one of the city’s most recognisable hotels. On the same day, the Victoria Square property will transition into its next phase as Amora Adelaide, marking the exit of Hilton and the arrival of a new hotel brand following a $73 million transformation.
Amora Hotels & Resorts purchased the former Hilton Adelaide building last year, setting in motion a full repositioning of the landmark site. From 1 July, Amora will take over operations, reintroducing the hotel to the market under its own flag and vision.

The change signals a significant shift for the Adelaide hotel landscape. Hilton Adelaide has been a fixture in the city for decades. Its departure clears the way for Amora to reshape the property as a contemporary five‑star destination.
At the same time, Amore are starting a $73 million redevelopment of the property. This will deliver a refreshed look and feel across the hotel, designed to appeal to both business and leisure travellers.
Amora is a family‑owned hospitality group led by the Siriphatrawan family, with a long history in international hotels. Amora Adelaide becomes the brand’s fourth hotel in Australia. It joins a broader portfolio across Australia and Asia, known for combining luxury with warm, personal service.
Located on Victoria Square, the hotel will undergo extensive redevelopment to support its repositioning. Architectural firm Cottee Parker led the redesign, transforming public spaces and introducing a reimagined grand lobby that sets the tone from arrival. The upgrade elevates the former Hilton into a newly defined five‑star offering under the Amora brand.
The transition will see a refresh of the current dining and beverage offering. The new brasserie‑style café, Victoria’s Table, offers relaxed all‑day dining. Coal Cellar + Grill will be significantly reworked, continuing its focus on South Australian produce while delivering a more contemporary dining experience.
Across the hotel, 380 guest rooms will be redesigned. The new interiors draw inspiration from South Australia’s landscapes, using warm tones and layered textures that reflect rolling hills, morning mist and caramel sunsets.
The property remains a major events destination. Amora Adelaide features a 660sqm grand ballroom and more than 2,200sqm of flexible function space. State‑of‑the‑art, multi‑million‑dollar audiovisual technology supports conferences, events and large‑scale gatherings.
